Frozen Produce Holds More Nutrients

GEORGIA—A recent study conducted at The University of Georgia College of Agricultural and Environmental Sciences found that frozen produce might retain vitamins better than fresh stored produce.

The study analyzed fresh and frozen blueberries, strawberries, broccoli, green beans, corn, spinach, cauliflower, and green peas over a two-year period. They studied the amount of nutrients found in fresh produce on the purchase day and again five days after the purchase day. They also analyzed the amount of vitamins and nutrients found in the frozen produce.

The team found that as fresh produce is stored in the fridge, the amount of vitamins and nutrients decrease over time. Specifically they found that frozen produce had significantly higher vitamin A compared to fresh produce that was stored for a few days. However, they also noted that produce has the highest amount of nutrients when you consume them fresh the day of purchase.

According to the study co-author and associate professor, Ronald Pegg:

“Freezing in essence is nature’s pause button. It maintains freshness in what we call fresh foods, slows down enzymatic reactions, increases the time it takes for anything to degrade.”

If you are interested in receiving the most nutrients from produce, you should consider consuming frozen fruits and vegetables or consume them fresh the same day you purchase them.
